
Negrense chef Nico de Asis Millanes is currently headlining the Southeast Asia Regional Hawker Series at the Raffles Courtyard, Raffles Hotel Singapore, that will run until Sunday, April 26.
The event, held in collaboration with Makansutra’s K. F. Seetoh, marks Millanes’ return to the series following his 2025 presentation of Cansi.
For the current solo showcase, the Bacolod-based chef is featuring two regional staples: Chicken Inasal and Chicken Binakol.
The menu highlights traditional preparation methods, with the Inasal marinated in coconut sap vinegar and calamansi before being flame-grilled and basted in annatto-infused oil.
The Chicken Binakol provides a traditional Ilonggo counterpoint, utilizing a broth of young coconut water, lemongrass, and ginger.
Millanes, an alumnus of École Ducasse, currently operates several food and beverage concepts in Bacolod City, including Terrasse Bistro, Portiko, and Cafe Gorda.
He is also associated with the family-owned Bacolod Chicken Parilla in Quezon City, which has been in operation since 2007.
The Southeast Asia Regional Hawker Series is a year-long initiative at Raffles Hotel that features a rotating roster of culinary talent from across the region.*
